Ancho Chili & Chocolate Goat cheesecake Popsicles:    ​

​(75 calories each)​

​4 ounces low-fat goat cheese, softened
1/3 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon cocoa powder
2 eggs, separated
1 tablespoon flour
1/4 teaspoon ancho chili powder

​Preheat oven to 350 degrees. Combine goat cheese, sugar, and vanilla and mix until smooth. Add egg yolks two at a time. Fold in flour, cocoa powder, and ancho chile. Whip egg whites until soft peaks form. Gently fold into mixture. Spread into parchment-lined baking pan. Bake for 20 to 25 minutes. Cool. Remove from pan by picking up parchment. Use a 1-inch cookie cutter to make individual circles and insert skewers to create a "lollipop."

  • 3 Ripe bananas
  • 2 cups rolled oats
  • 1 cup dates (pitted and chopped)
  • 1/3  cup vegetable oil (or unsweetened applesauce or pureed carrots)
  • 1 tsp vanilla extract
  • Preheat oven to 350. Mash bananas and stir in oats, dates, oil and vanilla. Mix well and let rest 15 min. Drop by spoonful onto baking sheet and bake for 20 min or until lightly browned.

Whoopie pies:    ​Calories 202, Total Fat 11 g, ​

​​Cookies:

1/3 cup unsweetened apple sauce

3/4 cup packed dark brown sugar

1  large egg
3/4 cup nonfat milk (or goat's milk or soy milk)

1 teaspoon  vanilla extract

1 1/2 cups  whole-wheat pastry flour

1/3 cup  unsweetened cocoa powder

3/4 teaspoon  baking powder

3/4 teaspoon  baking soda

1/4 teaspoon  salt
 

Filling:
1/2 cup  cold water

2 teaspoons  unflavored gelatin

1 cup heavy cream

2/3 cup  nonfat plain yogurt

1/2 cup  confectioners' sugar

1 teaspoon  vanilla extract
 
Preheat oven to 350 degrees. Mix wet ingredients together, mix dry ingredients together and then combine and let batter rest 15 min. Drop by tablespoon onto baking sheets sprayed with nonstick spray and use spoon to make a 2-3 inch circle with batter. Bake for about 8 min. While allowing cookies to cook, prepare filling by mixing water and gelatin in microwave safe bowl and let it stand 1 min. Cook in microwave on high for about 20-30 seconds until gelatin has dissolved.​
Beat cream, yogurt, confectioners' sugar and vanilla in a medium bowl with an electric mixer on high speed until very thick, about 1 minute. With the mixer beating constantly, add the gelatin mixture in a steady steam until well combined. Cover and refrigerate until the cream filling is thickened to the consistency of pudding, about 30 minutes. Whisk again until smooth.

To assemble whoopie pies: Turn half the cookies bottom side up and top with a generous 2 tablespoons of the cream. Top with the remaining cookies. Chill in the refrigerator until the filling is set, about 30 minutes.
